بررسی تغییرات الگوی مصرف مواد غذایی خانوارهای ایرانی از دهة 1340 تاکنون

چکیده
امنیت غذایی هر کشور ریشه در امنیت تغذیه کلیه خانوارهای آن کشور دارد. در همین راستا، شناخت الگوی مصرف مواد غذایی خانوار یکی از الزامات سیاست‏گذاری و برنامه­‌ریزی مناسب برای دستیابی به امنیت غذایی است. با بررسی تغییرات الگوی غذایی خانوار در طول زمان، می­‌توان وضعیت حال حاضر را با گذشته مقایسه و با برنامه‌­ریزی مناسب، در راستای بهبود شرایط گام برداشت. با این رویکرد، در مطالعه حاضر، با تحلیل ثانویه داده‌­های «طرح آمارگیری از هزینه و درآمد خانوار شهری و روستایی» مرکز آمار ایران، به بررسی الگوی مصرف مواد غذایی خانوارهای ایرانی طی سال‌­های 1401-1361 و مقایسه آن با سبد مطلوب غذایی پرداخته شد. نتایج مطالعه نشان داد که در طول دوره مورد بررسی، سرانه مصرف اغلب مواد خوراکی به‌‏ویژه نان، مواد قندی و روغن­‌های گیاهی در ایران بیش از مقدار توصیه‌‏شده در سبد مطلوب بوده و عامل درآمد در انتخاب نوع و مقدار مصرف مواد خوراکی نقش تعیین‌‏کننده داشته است. افزون بر این، بر اساس نتایج الگوی مصرف مواد غذایی، این الگو در مناطق شهری و روستایی مشابهت زیادی دارد. سرانجام، بر اساس یافته‌­های پژوهش حاضر، در طول دوره مورد بررسی، سرانه مصرف انواع گوشت از جمله گوشت قرمز در مناطق شهری و روستایی سیر کاهنده داشته است؛ و بر اساس نتایج پژوهش نیز با بهبود وضعیت رفاهی و اقتصادی و افزایش آگاهی مردم، می‌­توان الگوی مصرف مواد غذایی خانوارهای ایرانی را اصلاح و به سبد مطلوب نزدیک کرد.

Examining the Changes in Food Consumption Patterns of Iranian Households from 1960s until Now

چکیده English

Introduction: Food security in the society roots in the food security of households. Understanding the household food consumption pattern is a prerequisite for proper planning and policy making to achieve food security. Food consumption pattern changes over a specific period makes it possible to compare the current and past situations of the same country.
Material and Methods: In this study, changes in the pattern of Iranian households' food consumption were investigated based on the data of Statistical Center of Iran (SCI) from 1960s to the present time.
Results and Discussions: The results of this comparison showed that during this period, the per capita consumption of most food items, especially bread, sugary items and vegetable oils, was more than the recommended amount in the basket; also, the determining role of the income factor in choosing the type and amount of food consumption was emphasized. Another study result indicated the high similarity of food consumption patterns in urban and rural areas.
Conclusion and Suggestions: Per capita consumption of all types of meat, including red meat, has been decreasing in both urban and rural areas during the studied period, which is a sign of danger to food security of Iranian households. The main suggestion of this research is for government to increase people's awareness while improving the welfare and economic status of the society.
